Garden

It is the garden and the rhythm of the seasons that Himmel&Hage revolves around.

The garden's harvest is processed in the kitchen and bakery into delicious dishes, bread and pastries. The guests' food scraps are used and turned into nutritious compost to fertilize the garden and vegetable gardens.

It is grown according to organic principles with crop rotation and cover cultivation without chemicals. Most vegetables are also heritage plants and many of our flowers are edible and beneficial to us, insects and bees

We water with rainwater from our buried water tanks and also plan a pond for 2024.

GARDENER

Astri is Himmel&Hage's gardener.

She sees sustainability as a central point in her creation. Gardening, pruning, planning, design and composting should form a cycle. Astri has special expertise in small-scale organic farming and leads courses in the subject at Gotland Folkhögskola. She also grows food for herself on her own farm at Niome in Stenkyrka.

MEDICINAL PLANTS AND HERBAL GARDEN

In our garden there is a medicinal plant and herb garden. The original idea is to create a smaller monastery garden inspired by Hildegard of Bingen.

In raised beds, we have grown approx. 40 different medicinal and herbal plants. You can find the list

THE ANIMALS

The garden is the home of our animals.

Our Scanian flower hens, our Nordic bees, farm cats and rabbits live here. In the summer, we also have Gotland lambs on summer vacation with us. The fine lambs come from Sorby GÃ¥rd in Stenkyrka.
